Great and if more than one encryption method is set, then which one does it default to?

Yes that works with S/MIME as well. In fact with all supported encryption methods.
It also doesn't mention if the recipient should be
set to internal or
external? I'm assuming internal.
Email to internal will be decrypted, email to external encrypted. So the user must be set
to encrypted.
